技術說明

一種具有攜帶及緩釋營養物質(如維生素)功效的食用纖維-營養素複合物之製備方法，其係利用天然食用纖維作為載體，與營養物、食用油及水進行混合與高壓均質處理，快速和簡單的製備成食用纖維-營養素複合物，具有攜帶及緩慢釋放營養物之效果。本發明可使食用纖維在結構上暴露出較多的官能基，可應用在食用纖維之官能基修飾，有效提高天然食用纖維攜帶營養物之能力，食用纖維-營養素複合物具有緩慢釋放營養物之優點，經攝食後可幫助維持血漿中營養物質於數小時內有較高的濃度，幫助營養物質之吸收。 It is a simple and rapid method for the preparation of food fiber-nutrient composites with nutrient (i.e vitamin) carrying and slow-releasing abilities. Natural food fiber is used as a nutrient carrier to prepare the food fiber-nutrient composite. The composites can carry nutrient and release them gradually. Animal studies have demonstrated that the adminstration of food fiber-nutrient composite can maintain the plasma nutrient of rats at a relatively high level for several hours for a better absorption of nutrient.
