蔬果保鮮包裝材及製備該包裝材的方法

研究先使用頻率50 Hz、電場強度400 kV/m的交變電場,以不同時間(60, 90, 120 min)處理蠔菇,並與相同電場強度及處理時間之直流電場進行品質指標比較,再以不同電場強度之交變電場進行處理,希望透過電場抑制分解酵素活性,延緩蠔菇細胞壁組織自溶現象,提升市場價值。本技術顯示以400 kV/m, 50 Hz之交變電場處理120 min可維持最佳採收後品質,在儲藏12天後與控制組進行比較,失重率從15.84%降至8.72%,褐變度由30.22降低至17.05,硬度下降率由76.9%降至64.3%,可溶性固形物由13.6°Brix 降低至10.8°Brix,丙二醛含量由4.60 mol/g FW 減少至3.72 mol/g FW。以600 kV/m交變電場處理120 min能延緩細胞壁主成份-幾丁質及β,1-3葡聚醣的下降,儲藏12天後與控制組的0.91 g/100g DW及0.13 mg/100g DW相比,以600 kV/m之交變電場處理120 min則維持在1.16 g/100g DW及0.33 mg/100g DW。最後以電子顯微鏡觀察微觀結構變化,也可以觀察到隨著電場強度的上升,細胞壁立體結構維持的較為完整,證實了交變電場處理能藉由抑制蠔菇細胞壁分解酵素之活性來維持儲藏其間細胞壁之完整性,延緩細胞壁分解造成的組織自溶現象。 In this research, we use 50Hz, 400 kV/m of ACEF with different treating time (60, 90, 120 min), compared with DCEF 400 kV/m then pre-treated for 120 min to inhibit the cell wall decomposition enzyme activity, delay the autolysis of oyster mushroom.The first stage results show pre-treated oyster mushroom with ACEF (400 kV/m, 50 Hz, 120 min) has a lower weight loss (from 15.84 % to 8.72 %), browning index (from 30.22 to 17.05), firmness drop rate (from 76.9% to 64.3%), soluble solid content (from 13.06 °Brix to 10.8 °Brix) and MDA content (from 4.60 mol/g FW to 3.72 mol/g FW) compared with untreated sample. The second stage results show that ACEF 600 kV/m pre-treatment for 120 min can maintain the content of chitin for 1.16 g/100g DW and β,1-3 glucan for 0.33 mg/100g DW, while the control group are 0.91 g/100g DW及0.13 mg/100g DW. The chitinase and β,1-3 glucanase activity have inhibited for 32% and 47%. The picture of microstructure also shows that ACEF treatment can keep cell wall structure integrity during storage. Through our study, it can be confirmed that ACEF treatment can inhibit cell wall decomposition enzyme’s activity, delay the cell wall decomposition and autolysis of oyster mushroom.
