乳果寡醣之製備方法

本發明提供一種乳果寡醣之製備方法,包含下列步驟:提供一反應基質,反應基質係由蔗糖和乳糖所組成。接著提供一水解製程,包含調整反應基質之pH值,再添加果聚醣蔗糖酶至反應基質中以得到一水解反應基質,將水解反應基質於一水解溫度下反應一水解時間以得水解液。再將提供一聚合及轉果糖基製程,包含調整水解液之pH值,並再次添加果聚醣蔗糖酶至水解液以得到一聚合及轉果糖基反應基質,將聚合及轉果糖基反應基質於一聚合及轉果糖基溫度下反應一聚合及轉果糖基時間以得反應液,反應液中包含乳果寡醣。 A preparation method of a lactosucrose includes following steps. A reaction substrate is provided, wherein the reaction substrate consists of sucrose and lactose. A hydrolysis process is provided, which includes adjusting the pH of the reaction matrix and adding a levansucrase into the reaction matrix to obtain a hydrolysis reaction substrate, and then the hydrolysis reaction substrate is reacted at a hydrolysis temperature for a hydrolysis time to obtain a hydrolysate. A polymerization and transfructosylation process is provided, which includes adjusting the pH of the hydrolyzate and re-adding the levansucrase into the hydrolysate to obtain a polymerization and transfructosylation reaction substrate, and then the polymerization and transfructosylation reaction substrate is reacted at a polymerization and transfructosylation temperature for a polymerization and transfructosylation time to obtain a reaction solution including the lactosucrose.
