新穎之酵母菌及其應用

分離自土壤的一株酵母菌(編號54),經食品工業發展研究所鑑定其學名為Saccharomyces pastorianus。此菌經所建立之培養條件培養4天,萃取其有效成份,以分化的3T3-L1脂肪細胞進行體外測試,顯示其可顯著增加細胞對葡萄糖之攝取能力,且具濃度依存性。以streptozotocin (STZ)所誘導的 BALB/c糖尿病小鼠餵食此菌體 6天其血糖含量顯著降降低;STZ所誘導的SD糖尿病大鼠餵食此菌萃取物6週,可顯著改善其葡萄糖耐受性,降低其空腹及飯後2小時血糖值。此菌活性成份為蛋白質,其細胞曾次的作用機轉也已研究知曉。 A novel yeast isolated from soil in Taiwan is identified to be Saccharomyces pastorianus. In vitro using cell model of differentiated 3T3-L1 adipocytes the yeast extract greatly increased cell glucose uptake. In vivo oral administration of whole yeast cell for 6 day could decrease serum glucose in STZ-induce mice. In addition, oral administration of yeast extract for 6 weeks, the 2 h-after-meal serum glucose and fasting serum glucose significantly decreased. Serum triglycerol alos decreased. The activie component in yeast have been purified and demonstrated to be a protein. The mechanism of this active protein for its regulation of glucose uptake have been elucidated
